Cool Weather Cuisine: Ginger Berry Delight

Berries are sweet health bombs, packed with disease-fighting antioxidants. In this dessert, the ginger, sugar and walnuts complement the natural flavors of the berries for a dessert so tasty that your kids won’t believe it’s good for them.

Ingredients:

  • 1 12-ounce package fresh or frozen cranberries
  • 1 cup fresh or frozen mulberries
  • 1/2 cup granulated sugar
  • 1/2 cup crystallized ginger, minced
  • 1 cup fresh or frozen raspberries
  • 1/2 cup chopped walnuts
Preparation:
Pulse cranberries in a food processor until coarsely chopped. Transfer to a medium bowl. Stir in the sugar, ginger, mulberries and raspberries. Sprinkle with chopped walnuts, cover and refrigerate for at least 3 hours.

Serves 4
