Dandelion Salad with Garlic Dressing

Dandelion greens are rich in vitamin A, B, C and D.  They contain calcium, which is essential for the health of your bones, and helps prevent the bone-density problems that come with age. Try them in this sweet, warm salad (you can also substitute spinach for dandelion)

Ingredients:
  • 6 cups bite-size pieces dandelion greens with the tough stems removed
  • Garlic dressing (a store-bought garlic vinaigrette works perfectly)
  • 1 medium shallot, finely chopped
  • 1/4 cup pine nuts, toasted
  • 2 ounces goat cheese, crumbled
  • Freshly ground pepper, to taste
Preparation:
Put the dandelion greens in a large salad bowl. Heat garlic dressing in a small saucepan over medium heat until warm (1 to 2 minutes). Add shallot and simmer for 3 to 5 minutes, until shallot is softened. Pour the warm dressing over the greens and toss until they are lightly browned. Add pine nuts and goat cheese and toss again, letting the warm greens melt the cheese just a bit. Season with freshly ground pepper.

Serves 2
