Sweet and Tangy Watermelon Salad

Fresh watermelon is juicy and packed with antioxidants that support your body’s overall health, including - you guessed it - the health of your feet. This mix of watermelon and cucumber with a dash of dry roasted peanuts makes a perfect sweet, tangy and crunchy salad that goes with any meal.

Ingredients:
  • 2 tablespoons rice vinegar
  • 2 1/2 teaspoons sugar
  • 2 cups diced seeded watermelon
  • 2 cups diced cucumber
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup unsalted dry-roasted peanuts, toasted and coarsely chopped
Preparation:
Mix vinegar and sugar in a medium-sized bowl and stir until the sugar almost dissolves. Add watermelon, cucumber and cilantro. Toss gently, and before serving, sprinkle with peanuts.
