Gooseberry Juice

A highly underrated berry, the gooseberry is a great source of vitamin C with a more exotic flavor profile than the regular-old orange. Unfortunately gooseberries are not always available at mainstream markets. Try specialty grocery stores and farm stands if your local purveyor doesn't carry these Asian-born berries. Once you locate them, you'll find that juicing them is incredibly easy, and the result is refreshingly tasty.

Ingredients:
  • 1/2 pound gooseberries
  • 1 small piece fresh ginger
  • Pinch of salt
  • Water as needed
Preparation:
Chop the gooseberries into small pieces, removing the seeds. Place chopped, seeded gooseberries into a blender or food processor with ginger and salt. Process the fruit and ginger until it has formed a pulpy paste. Add water slowly, pausing to process the mixture every few seconds. The pulp will not completely dissolve, but will instead flavor the water. Strain to separate the juice from the pulp. Chill before serving.
