Healthy Grilled Salmon With Sauteed Spinach

When summer arrives, we all anticipate cooking and eating outdoors. Clean up your grill routine by swapping usual favorites like chicken and burgers with heart-healthy seafood. Start with salmon, a delicious and filling fish which is rich in omega-3 fatty acids, low in calories and saturated fat, and still high in protein. This rich and smoky combination of salmon and spinach is sure to be a crowd-pleaser.

Ingredients:
  • 3 ounces Alaskan wild salmon
  • 4 ounces cooked spinach
  • 1 tablespoon olive oil
  • Lemon juice to taste
  • Salt and freshly ground pepper to taste
Preparation:
Season the salmon with spices and lemon juice and keep it covered and chilled for at least 2 hours. Grill the seasoned salmon to your liking. While the salmon is grilling, sauté the spinach lightly in olive oil. Serve salmon on top of spinach and season with salt and freshly ground pepper.

Serves 1.
