Holiday Health: Broccoli Bean Soup

Broccoli is rich in vitamins, minerals and antioxidants. Try it in a filling, high-protein bean soup, and turn a side dish into a main entrée.

Ingredients:
  • 1 14-ounce can vegetable broth
  • 1 cup water
  • 1 pound broccoli crowns, trimmed and chopped (about 6 cups)
  • 1 14-ounce can of white beans, rinsed
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground white pepper
  • 1 cup shredded extra-sharp cheddar cheese
Preparation:
Bring broth and water to a boil in a medium saucepan over high heat. Add broccoli, cover and cook for about 6 minutes or until tender. Stir in beans, salt and pepper and cook for one more minute. Cool the mixture and transfer to a blender. Add cheese and puree. Serve warm.
