Tropical Cucumber Salad

This recipe for cucumber salad features a tasty mix of sweet and savory, with a hint of tropical flair - a perfect flavor for summer weather, and a great source of vitamins A and C.

Ingredients:
- 4 teaspoons of fish sauce
- 1 teaspoon freshly grated lime zest
- 2 tablespoons fresh-squeezed lime juice
- 1 tablespoon canola oil
- 2 teaspoons light brown sugar
- 1 teaspoon rice vinegar (or balsamic vinegar)
- 1/4 teaspoon crushed red pepper
- 1 medium cucumber
- 1 avocado
- 1 mango
- 1/4 cup fresh cilantro
- Salt and fresh ground pepper to taste

Preparation:
Whisk together the fish sauce, lime zest, lime juice, oil, sugar, vinegar and pepper. Set aside. Dice cucumber, avocado and mango into 1-inch cubes. Chop the cilantro. Toss cucumber, avocado and mango into the dressing mix until coated. Season with salt and pepper. Serve immediately.
