Easy Appetizers: Watermelon Tomato Gazpacho

This tasty take on the classic Spanish soup calls for the freshest seasonal ingredients. Even better, it requires no cooking time at all - simply blend, cool, garnish and enjoy. The creative mix of watermelon, tomato and fresh mint creates a bright summer flavor that's packed with beneficial vitamins and antioxidants. This entree will fill you up without weighing you down, and so it makes an ideal midday meal when you're aiming to maintain energy and maximize the daylight hours.
Ingredients:
Puree watermelon, tomato, cucumber, pepper, jalapeno, onion, garlic and lime juice in a blender or food processor until texture is smooth. Add lime juice as needed for texture. Chill for at least two hours. Serve garnished with fresh mint leaves and salt and fresh ground pepper to taste.
Serves two.

- 3 tablespoons lime juice (preferably freshly squeezed)
- Salt and freshly ground pepper to taste
