Food Pyramid for Kids: Spinach & Pecan Salad

Rich in antioxidants, iron, and vitamins, spinach is something of a miracle food. Unfortunately, as all parents know, it can feel like it would take a miracle to get the kids to eat it. But even the pickiest eaters have been known to love this sweet pecan spinach salad. Try it!
Ingredients:
Toast pecans in a small dry skillet over low heat, stirring often, for 2-3 minutes, and then set aside to cool. Toss spinach and cucumber in a salad bowl. Heat oil in the same skillet over a medium-low flame. Then toss in the shallots and cook until they soften (about 4 minutes). Add vinegar and maple syrup and bring to a boil. Season with salt and pepper.
Don't wait for the dressing to cool. Instead, pour it over the spinach and cucumber. Toss well and sprinkle with cheese and toasted pecans

- 1 cucumber, peeled, seeded and cut into 1/4-inch slices

- 2 tablespoons pure maple syrup
- Salt and fresh ground pepper
