Healthy Desserts: Berry Frozen Yogurt

This creamy, cooling dessert is low in fat, high in antioxidants, and a great source of probiotics (live bacteria that aids in digestion). And, most importantly, it's a delicious summertime treat that's easy to prepare and even easier to eat.

Ingredients:
- 3 cups frozen or partially thawed berries
- 6 tablespoons sugar
- 1 tablespoon lemon juice
- 3/4 cup low-fat plain yogurt

Preparation:
Combine berries, sugar and lemon juice in a food processor or blender and puree until. Add yogurt and continue to pulse until mixture is smooth.

Freeze the mixture in a metal pan for at least six hours. Once fully frozen, break into chunks and reprocess in small batches until it has the smooth texture of frozen yogurt.

Serve immediately, or store in an air-tight container and freeze for an additional hour and a half (if you are seeking the firmer consistency of ice cream).

Note: if you have access to an ice-cream maker, prepare the berry-yogurt blend according to the manufacturer's directions.

Serves six.
