Healthy Snack Ideas: Sauteed Spinach

Go light on your stomach this summer. Stick with seasonal leafy greens like spinach. High in water content, rich with vitamins A and C and antioxidants and bursting with iron, spinach is the perfect summer green. Fix yourself this quick sauteed spinach whenever you're seeking a midday snack, or a simple side to grilled fish or chicken.
Ingredients:
Heat oil in a skillet over medium heat. Add garlic and cook until beginning to brown (1 to 2 minutes). Add spinach and toss to coat. Cover and cook for 1 to 3 minutes. Remove from the heat and add lemon juice, salt and crushed red pepper. Serve immediately.

- 4 cloves garlic, thinly sliced
- 1 pound fresh spinach
- 1 tablespoon lemon juice
- 1/4 teaspoon salt
- 1/4 teaspoon crushed red pepper
