Soup Recipes: Chilled Ginger-Melon Soup

What better way to cool down than with a sweet chilled soup? Our ginger-melon soup recipe is packed with vitamins and fibers, on top of which it has naturally high water content-- making it a delicious means to keeping your body healthy and hydrated.
Peel cantaloupe and cut into cubes (should yield 4 1/2 cups). Add 3 tablespoons of ginger, orange zest and honey to a blender or food processor. Puree for 30 seconds to a minute. Add yogurt and process until smooth. Transfer to a bowl; slowly stir in orange and lemon juices. Cover and refrigerate until chilled. Garnish each portion with the remaining ginger.
Serves 6.

- 1 large ripe cantaloupe
- 3 tablespoons sliced crystallized ginger plus 1 tablespoon (reserve)
- 1 1/2 teaspoons freshly grated orange zest
- 1 teaspoon honey
- 1 cup low-fat plain yogurt
- 2/3 cup orange juice
- 1 tablespoon lemon juice
