Elderberry Orange Sauce



1 1/2 cup elderberries, rinsed and picked over

Juice from 2 medium oranges

2 tablespoons orange peel zest, cut in long, thin strips

1/4 cup agave nectar

Pinch of salt

1 tablespoon butter


Combine all ingredients, except butter, in a saucepan. Bring to a simmer. and cook until it’s reduced and slightly thickened.

Remove saucepan from heat and stir in butter.

Serve spooned over fish or chicken.
