Brown Basmati Pilaf

This healthy rice dish makes a great side to a meat, poultry or vegetarian main course. Feel free to experiment by adding other vegetables too.

Ingredients

1 tablespoon olive oil
1 leek, cleaned and diced
4-5 mushrooms, sliced thin
1 teaspoon sea salt
1 cup brown basmati rice, rinsed
1 3/4 cups of chicken broth or water

Preparation

Sauté leek for 1-2 minutes.
Add mushrooms and sea salt and sauté for 2-3 minutes.
Add rice and chicken broth (or water) and bring to a boil. Cover, reduce flame to simmer and cook for 40 minutes.
