Carrot Ginger Squares with Cream Cheese Frosting
Ginger-spiced carrot squares with cream cheese frosting are a perfectly sweet finale to an elegant holiday meal.

Carrot Ginger Squares:
3/4 cup whole grain pastry flour
3/4 cup whole grain all-purpose flour
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon allspice
1/4 teaspoon sea salt
3 tablespoons maple sugar (or other sugar)
1 cup walnuts, toasted and coarsley chopped
1/4 cup crystallized ginger, diced small
1/3 cup raisins
3 eggs, beaten
1/3 cup yogurt
3 tablespoons honey
1 tablespoon walnut oil
2 teaspoons vanilla extract
1 1/2 cups carrots, finely grated

Cream Cheese Frosting:
2 tablespoons unsalted butter, room temperature
12 ounces cream cheese (or Neufchatel cheese), room temperature
1/2 cup powdered sugar
1 teaspoon vanilla extract
1 cup toasted walnuts, finely chopped
2 tablespoons unsalted butter, room temperature
12 ounces cream cheese (or Neufchatel cheese), room temperature
1/2 cup powdered sugar
1 teaspoon vanilla extract
1 cup toasted walnuts, finely chopped

Preheat oven to 350 degrees.
Mix dry ingredients (flour, baking powder, cinnamon, nutmeg, allspice, sea salt, maple sugar, walnuts, ginger and raisins) in a large bowl.
In a separate bowl, mix wet ingredients (eggs, yogurt, honey, walnut oil, vanilla and carrots).
Combine wet ingredients with dry ingredients.
Butter or oil a 9x9 casserole dish or baking pan. Pour mixture into pan.
Bake 35-40 minutes or until lightly browned around edges. Let cool.
In a food processor, combine butter, cream cheese, powdered sugar and vanilla and process until creamy. Spread cream cheese frosting on top of cake. Sprinkle with toasted walnuts.
