Citrus Mint Couscous
A cool and colorful grain salad that's quick enough for a light family meal and festive enough to serve to guests.

Ingredients
- 3 teaspoons fresh spearmint leaves
- 1 1/2 cups hot water
- 1 cup couscous
- 2 tablespoons lemon juice
- 2 tablespoons orange juice
- 6 teaspoons olive oil
- Salt and pepper, to taste
- 1/2 cup chopped red pepper
- 3 tablespoons fresh chives
- 1/2 cup crumbled feta
- 2 tablespoons pine nuts

Steep mint leaves in hot water for about 4 minutes, then pour over couscous in a large bowl. Cover with plastic wrap and let sit for about 5 minutes until water is absorbed.
Meanwhile, in a small bowl, mix together juices, add olive oil, salt and pepper, whisk until combined.
Uncover couscous, fluff with fork, and drizzle juice combination over it. Add red pepper, chives, feta and pine nuts.
