Marinated Chickpea Salad
This zesty summertime salad features heart-healthy chickpeas and cherry tomatoes, plus a splash of vinaigrette and a sprinkle of salty feta.

Ingredients

1 1/2 cups cooked garbanzo beans (can use canned)
8-10 cherry or grape tomatoes, halved
1 cucumber, peeled, seeded and diced
3-4 black olives, pitted and chopped
3 shallots, peeled and minced
1 teaspoon fresh oregano, minced
1/3 cup olive oil
2-3 tablespoons white wine vinegar
Sea salt
Freshly ground black pepper
1 ounce feta cheese, crumbled
Lettuce leaves (preferably butter lettuce)

Place cooked beans, cherry tomatoes, cucumber and black olives in a mixing bowl.
In a separate bowl, whisk together shallots, oregano, olive oil, vinegar and sea salt and pepper to taste.
Pour dressing over salad. Fill individual lettuce leaves with 1/2 cup of mix and garnish with crumbled feta cheese.
