Easy Roasted Carrots
Everyone knows that carrots are packed with beta carotene and are fabulous for your eyes, but did you know they're also loaded with iron, zinc and copper? Roasting brings out their natural sweetness, making this dish a delicious side any time of year.
- 4-5 carrots, cut into 1/2 to 1-inch chunks
- A few splashes olive oil
- Sea salt, to taste
- Black pepper, to taste
- Dried rosemary, to taste
Preheat oven to 400.
Place the carrots in a roasting pan and drizzle with olive oil. Season with sea salt, black pepper and rosemary.
Cover pan with foil and cook 30 minutes.
Uncover, turn with tongs and cook additional 15-20 minutes or until soft.
