Savory Sautéed Vegetables
Thinly sliced leek, cabbage, bell pepper and summer squash make for a colorful confetti full of fiber and flavor.

Ingredients

1 leek, cut into thin slivers
1/4 head green cabbage, sliced thin
1 orange pepper, seeded and sliced thin
1 yellow summer squash, cut into thin matchsticks
2 teaspoons toasted sesame oil
Sea salt
1 teaspoon toasted sesame seeds

Sauté leek with water over high heat for 1-2 minutes. Add a pinch of sea salt and Chinese cabbage; cover and cook 1-2 minutes.
Add bell pepper, summer squash, sesame oil and another pinch of sea salt. Cook 2-3 minutes.
Garnish with toasted sesame seeds and serve hot.
