Spring Spinach Saute
Blue cheese adds richness and walnuts add crunch to this quick spinach dish.

Ingredients
- 2 tablespoons butter
- 1/2 large sweet onion, sliced
- 2 cloves garlic
- 2 large tomatoes, seeded and chopped
- 1 cup chicken broth
- 11 ounces baby spinach
- black pepper, to taste
- 2 ounces crumbled blue cheese
- 2 tablespoons chopped walnuts

Melt butter in skillet, add onions and garlic, stir occasionally till tender. Add tomatoes, broth and spinach. Stir for about 2 minutes, until spinach is wilted.
Season with black pepper, to taste.
Transfer into a shallow serving bowl, sprinkle with blue cheese and walnuts before serving.
