Golden Gravy

Ingredients
- 1/2 cup nutritional yeast
- 1/2 cup whole-wheat flour
- 1/3 cup canola oil
- 1/2 cup chopped onion
- 2 teaspoons minced garlic
- 2 teaspoons chopped fresh thyme, or 1 teaspoon dried
- 2 teaspoons chopped fresh sage, or 1 teaspoon dried
- 4 cups water
- 1/4 cup tamari
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon sea salt

Stir nutritional yeast and flour in a heavy skillet over medium heat until pale golden and fragrant, about 5 minutes. Set aside.
Heat oil in a large, heavy saucepan over medium heat. Add onions and sauté until tender and beginning to brown, about 10 minutes. Add garlic and herbs, and sauté until fragrant, about 30 seconds. Whisk in the flour mixture. Whisk in the water, tamari, pepper and salt.
Bring the gravy to a simmer, whisking frequently. Continue simmering until the gravy is thick and creamy. Strain the gravy into a bowl and serve.
