Green Tea, Kiwi & Green Apple Kanten
This kanten recipe may remind you of a gelatin-style dessert. But don't think Jell-O mold—this cool end-of-meal showstopper is made with agar agar, a sea vegetable.

Ingredients
- 3 medium organic green apples, sliced into bite-size pieces
- 1 tablespoon organic lemon juice
- 2 droppers stevia liquid
- 1/2 cup organic white grape juice
- 1 1/2 cups brewed organic green tea
- 3 medium organic kiwis, divided
- 3 tablespoons light agave nectar
- 2 1/2 tablespoons agar agar (a sea vegetable; available in natural foods and Asian grocery stores)

Put apple slices in a mixing bowl, add lemon juice, stevia and agave and toss. Set aside.
Combine grape juice and brewed green tea in a medium saucepan on medium heat. Mix in agar agar, stirring constantly until dissolved, about 5 minutes. Remove from heat as soon as agar agar dissolves, and set aside to cool.
Peel 2 kiwis, cut into 1/4-inch-thick slices and add to apple mixture. Immediately pour into an 8- by 8-inch glass Pyrex dish. Refrigerate for at least two hours, until mixture gels.
Peel and slice remaining kiwi and arrange on top of kanten as garnish just before serving.
