Curried Chicken Salad Sandwich
Fresh apples, cranberries and celery add crunch to curried chicken salad—a healthy and flavorful choice for a brown bag lunch.

Ingredients

10-12 ounces cooked chicken, diced
2 celery sticks, diced
1/3 cup dried cranberries
1 apple, seeded and diced
1/4 cup extra virgin olive oil
2 tablespoons mayonnaise
2 tablespoons apple cider vinegar
1 1/2 teaspoons curry powder
1/2 teaspoon sea salt
Freshly ground black pepper to taste
Whole grain bread

Combine cooked chicken, celery, cranberries and apple in a mixing bowl.
In a separate bowl, whisk together olive oil, apple cider vinegar, mayonnaise, curry powder and sea salt. Pour dressing onto chicken salad and mix well.
