Stewed Chicken with Garlic and Tomatoes
In this heart-healthy take on a soul food classic, lemon-marinated chicken is stewed with savory olives, tomatoes and garlic.

Ingredients

12-16 ounces skinless chicken thighs
1/4 cup olive oil
Juice of 1 lemon
Sea salt
Freshly ground black pepper
1 onion, peeled and cut into thick wedges
2 garlic cloves
2-3 large tomatoes, chopped
5-6 olives, sliced thin
1 teaspoon dried oregano (or 1 tablespoon fresh oregano)

Mix olive oil and lemon juice and pour over chicken in a deep dish or pan. Marinate for 1-2 hours or overnight in the refrigerator.
In a heated skillet, sauté chicken with remaining marinade for 4-5 minutes.
Add onion, garlic, tomatoes, olives and oregano. Cover and cook 20-25 minutes on medium heat.
