Baby Moose Mud
A protein-packed carob-flavored mousse that's sure to be a favorite with both babies and adults.

Ingredients
- 12 ounces firm organic silken tofu, enriched with fiber
- 1/2 cup roasted carob
- 1 large ripe organic banana
- 2 tablespoons light agave nectar
- 2 single drops vanilla cream stevia liquid (available in natural foods stores and online)
- 1/4 teaspoon cinnamon
- 1/4 teaspoon xanthan gum (available in natural foods stores and online)
- 2 teaspoons arrowroot powder

In a food processor, puree drained tofu, carob, banana, agave, stevia, cinnamon, xanthan gum and arrowroot until smooth. Pour into 4 (8-ounce) ramekins. Refrigerate for at least 2 hours before serving.
Keep refrigerated.
