Ingredients
- 1 cup vegetable butter
- 1/2 cup vanilla rice protein powder (available in natural foods stores and online)
- 1 egg
- 1 cup almond milk
- 1/2 cup dark agave nectar (available in natural foods stores and online)
- 1 tablespoon vanilla
- 2 droppers vanilla liquid stevia (available in natural foods stores and online)
- 3 1/2 cups gluten-free flour
- 1/2 cup brown rice flour
- 3 teaspoons Stevia Plus powder (available in natural foods stores and online)
- 2 teaspoons cinnamon
- 2 teaspoons baking soda
- 2 teaspoons xanthan gum
- 1/2 teaspoon salt
- 1/2 cup organic raisins

In a stand-up mixer, cream butter and protein powder. Add egg, milk, agave, vanilla and liquid stevia, and beat until smooth.
In a separate bowl, sift together flours, powdered stevia, cinnamon, baking soda, xanthan gum and salt. Add dry ingredients to wet ingredients. Batter should be soft and fluffy, not dense like a regular cookie dough.
Drop 12 evenly spaced large spoonfuls onto an ungreased cookie sheet. Form into balls and flatten. Create faces with raisins for eyes and smile or frown.
Freeze for 30 minutes. Preheat oven to 350 degrees.
Bake in preheated oven for 12 to 15 minutes. Cool on wire rack.
