Four Apples Dessert

Ingredients
- 4 medium organic Fuji apples, sliced
- 1 tablespoon organic lemon juice
- 2 droppers stevia liquid
- 1 teaspoon cinnamon
- 1 teaspoon pumpkin spice
- 1 cup organic apple cider
- 1 cup water
- 1/2 cup organic raisins
- 2 teaspoons vanilla
- 2 rounded tablespoons agar agar (clear seaweed or kanten; available in natural foods stores and online)
- For crumble:
- 1/4 cup almond meal
- 2 rounded tablespoons of ground Brazil nuts
- 3 tablespoons agave nectar
- 1/4 teaspoon cinnamon
Preparation
Place sliced apples in mixing bowl. Pour lemon juice over apples and toss. Add agave, stevia, cinnamon and pumpkin spice. Toss apples until thoroughly coated. Set aside.
In a medium saucepan on medium heat, mix apple cider, water and raisins. Mix in agar agar and stir constantly until agar is completely dissolved.
Immediately add apple mixture to saucepan. Bring to a boil and simmer 15 to 20 minutes or until apples are tender. Pour into an 8- by 8-inch glass Pyrex dish. Stir the mixture until the raisins are evenly distributed. Refrigerate for at least 2 hours.
Meanwhile, mix all crumble ingredients in a small bowl and set aside
After dessert has been sufficiently chilled (it should feel like Jell-O when you test press it with a finger) garnish by spooning crumble mixture over top, and serve.
