Three-Berry Kanten with Fresh Mint
This refreshing berry dessert calls for agar, a creamy vegetarian gelatin-like base that eliminates the need for fattening eggs and custards.

1/2 cup blackberries
1/2 cup raspberries
3 cups apple juice or other juice
3 tablespoons agar flakes

Soak agar flakes in juice for 10-12 minutes. Bring mix to a boil in a saucepan, then reduce to medium-low heat and cook for 5-7 minutes.
Place berries in a bowl or casserole dish and pour hot liquid on top.
Let set in the refrigerator for an hour or more. Once gelled, cut into squares. Serve garnished with fresh mint.
