Carrot Salsa
News alert! Not all salsas must be tomato-based! Dig out the chips and try this finely textured carrot-based version that has just the right amount of zing.

Ingredients
- 1 pound carrots, peeled and chopped
- 1/2 cup red onion, finely chopped
- 1/3 cup fresh cilantro, finely chopped
- 1/3 cup fresh lime juice
- 1 1/2 jalapeño chiles, finely chopped
- 3/4 teaspoon sea salt
- 1/4 teaspoon ground cumin

Add carrots to a food processor and pulse just until finely chopped. Transfer carrots to a large bowl and stir in onion, cilantro, lime juice, jalapeños, salt and cumin.
Transfer to serving bowl and serve.
