Crunchy Caramel Corn
Great for movie nights at home or just a light, crunchy, and yes—even healthy—snack anytime.

Ingredients

1/3 cup popcorn kernels
3 tablespoons coconut oil
1/4 teaspoon sea salt
1/2 cup Sucanat (granulated cane juice)
3 tablespoons butter
1/2 cup maple syrup
2 teaspoons vanilla

Heat oil on high and add popcorn kernels. Cover and cook, shaking pot occasionally, until kernels are popped.
Season popcorn with sea salt.
In a saucepan heat sucanat, butter, maple syrup and vanilla on medium for 7-10 minutes.
Pour over popcorn and coat evenly.
Spread out on a cookie sheet and bake 10 minutes at 350°. Allow to cool for a few minutes before serving.
