Basic Lentils
Lentils are packed with protein and have a nutty, rich flavor. They can be eaten hot or cold, as a main dish with a few vegetables added, or as a side. Try adding them to soups, too.

Ingredients
- 2 cups lentils, rinsed well and soaked overnight
- 4-5 cups water
- 2 bay leaves

Bring lentils, water and bay leaves to a boil. Cover and simmer until tender, about 20-25 minutes.
