Chilled Soba Noodles with Sesame Vinaigrette
Low-fat soba noodles, made from nutty-tasting buckwheat flour, are tossed with a toasted black sesame seed vinaigrette and playful strips of seaweed.

Water for noodles
8 ounces soba noodles
Iced water
2 tablespoons toasted sesame oil
1 tablespoon brown rice vinegar
1/2 tablespoon black sesame seeds, toasted
2 scallions, minced
1 sheet nori (Japanese seaweed), cut into thin strips

Bring water (for noodles) to a boil in a pot. Add noodles and cook according to package directions (approx. 8-10 minutes).
In a mixing bowl, whisk together sesame oil and rice vinegar.
Drain noodles and drop into a bowl filled with iced water. Once chilled, remove noodles and put in a dry, empty bowl.
Combine chilled noodles with sesame dressing. Garnish noodles with minced scallions, strips of nori and toasted black sesame seeds.
