Peaches and Nectarines with Cashew Almond Cream

This summertime dessert couldn't be easier. And it's packed with heart-healthy antioxidants.

Ingredients

4 fresh peaches, rinsed and quartered
4 fresh nectarines, rinsed and quartered
1 cup cashews
1 cup almonds
2 tablespoons maple syrup
1 tablespoon vanilla extract
1/3 cup water
2 tablespoons mirin (a Japanese cooking wine, available in Asian markets and health food stores)

In a food processor or blender grind the nuts until pulverized. Add maple syrup, vanilla, mirin and water. Blend.
