Peaches and Nectarines with Cashew Almond Cream
This summertime dessert couldn't be easier. And it's packed with heart-healthy antioxidants.

Ingredients
- 4 fresh peaches, rinsed and quartered
- 4 fresh nectarines, rinsed and quartered
- 1 cup cashews
- 1 cup almonds
- 2 tablespoons maple syrup
- 1 tablespoon vanilla extract
- 1/3 cup water
- 2 tablespoons mirin (a Japanese cooking wine, available in Asian markets and health food stores)

In a food processor or blender grind the nuts until pulverized. Add maple syrup, vanilla, mirin and water. Blend.
Pour over quartered fruit.
