Summer Quinoa

This tabouli-like salad is refreshing and healthy and makes a good side dish for meat, poultry, fish or a vegetarian main course.

Ingredients

1 1/2 cup quinoa, rinsed
3 cups water
A pinch of sea salt
1/4 cup fresh basil, minced
1 cucumber, diced small
1 tomato, diced small

Bring quinoa and three cups water to a boil.

Add a pinch of sea salt, cover and simmer for 12-15 minutes.

Mix cooked quinoa with parsley, cucumber and tomato.
