French Lentil Soup with Vegetables

Satisfying French lentil soup takes a turn toward Asian flavors with dried kombu and celery root.

Ingredients

1 cup French lentils (small greenish/black), soaked overnight
1 inch dried kombu (sea vegetable)
2 1/2 cups water
1 medium onion, peeled and diced
2 carrots, diced
1/2 cup celeriac (celery root), peeled and diced
2 bay leaves
1 teaspoon sea salt
Parsley, minced
Grated cheddar cheese

Put lentils into a pot with fresh water and bring to a boil. Skim and discard any foam that rises to the top.
Add all other ingredients except shoyu. Bring to a boil.
Reduce flame to simmer; cover and cook 40 minutes.
Add sea salt and continue cooking 10-15 minutes or until lentils soften.
Garnish with minced parsley and grated cheddar cheese.
