Easy and delicious, this simple soup can be a meal in and of itself or a delightful starter course. Lentils have plenty of B vitamins, so it's nutritious, too.
- 1 tablespoon olive oil
- 1 onion, peeled and diced
- 2 garlic cloves, peeled and minced
- 1 teaspoon cumin
- 2 carrots, diced
- 2-3 celery stalks, diced
- 1 teaspoon sea salt
- 2-3 cups cooked leftover lentils
- 4 cups water
- 2 tablespoons cilantro, minced
On a medium/high heat, sauté onion and garlic for 1-2 minutes.
Add cumin, carrots, celery, sea salt, lentils and water. Cook for 15-20 minutes, stirring occasionally.
Garnish with cilantro and serve with a piece of whole grain bread.
