Scholar's Soup
The stock for this hearty veggie soup is based on bacopa, a lemony-scented leaf recognized as a “brain tonic” in ayurvedic medicine.

Ingredients
- 2 ounces bacopa leaf (available in natural products stores and online)
- 2 cups boiling water
- 1 clove garlic, chopped
- 1 onion, chopped
- 2 carrots, chopped
- 2 teaspoons rosemary
- 1/2 teaspoon dried sage
- 4 tomatoes, diced
- 2 cups vegetable stock
- 1 cup cooked black beans
- 1 sprig rosemary
- 3 sage leaves

Ready In: 1 hr
Add bacopa to boiling water, steep for 15 minutes. Strain.
Sauté garlic, onion, carrots, rosemary and sage. Add bacopa leaf tea, tomatoes, vegetable stock, black beans, rosemary sprig, and sage leaves. Simmer on low heat for 20 minutes.
