Spicy Herb-roasted Nuts
A nice snack to have on hand when friends and neighbors drop in for a visit. herbed nuts will keep for several days, stored at room temperature in an airtight container.

Ingredients
- 3 cups mixed raw whole nuts (almonds, walnuts, pecans)
- 2 tablespoons finely chopped mixed herbs, such as rosemary, oregano, sage, thyme
- 1/2 teaspoon crushed red pepper flakes
- 1 1/2 tablespoons good-quality olive oil
- 1/2 teaspoon sea salt
- 1/4 teaspoon freshly ground black pepper

Preheat oven to 400 degrees.
Spread nuts in a single layer on a baking sheet. Roast in oven for 10 minutes, or until fragrant.
While nuts are roasting, chop herbs and crushed red pepper together and combine with remaining ingredients in a medium bowl; stir to combine.
Remove nuts from oven and immediately transfer to bowl with herb mixture. Toss until well combined. Spread nuts on a baking sheet to cool before serving.
