Sprouted Buckwheat Groats
These sprouts come in handy for a variety of uses including salads, granola and sweet treats such as Chocolate Carob Protein Cookies.

- 3/4 cup dry buckwheat groats
- 2 cups filtered water

Soak dry buckwheat groats in filtered water in the refrigerator overnight. In the morning, drain into a colander.
Use a spatula to gently move groats to the sides of the colander so they are evenly spread out. Put colander on a plate to catch any dripping water, and cover with plastic wrap. Cut holes in plastic wrap with knife, and set colander out of the sun in a cool dry place.
In 24 to 36 hours, the buckwheat will sprout baby tails.
Store sprouted groats in a container in the refrigerator until ready to use.
