Thousand Island Dressing
An old-school dressing takes a turn for the better as silken tofu cuts the fat and adds protein to this rich and decadent sauce.

Ingredients
- 1/2 (12.3-ounce) container vacuum-packed firm silken tofu
- 1/2 cup Veganaise (available in health food stores)
- 1/3 cup Homemade Ketchup or organic ketchup
- 3 tablespoons pure maple syrup
- 1 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon wasabi powder
- 1 cup coarsely chopped dill pickles

Blend tofu, Veganaise, ketchup, syrup, salt, pepper and wasabi powder in a blender until smooth. Add pickles and pulse to blend.
Transfer dressing to a bowl. Cover and refrigerate at least 4 hours—or up to 3 days—to allow the flavors to blend.
