Tropical Tea Tapioca

A sweet and creamy dessert the whole family can enjoy.

Ingredients

1/2 cup large pearl tapioca
2 cups brewed black tea
pinch salt
1 (13.5-ounce) can coconut milk
maple syrup, to taste
fresh fruit slices

Soak tapioca in water for 20 minutes, or according to package directions. Drain.

In a saucepan, combine tapioca, tea and salt. Simmer over medium heat, adding a bit of water if necessary. After tapioca has simmered for 10 minutes, test for doneness: pearls should be a little gooey on the outside but still chewy on the inside.

Spoon tapioca into small dessert dishes, pour a little coconut milk on top and drizzle with maple syrup. Serve garnished with sliced fresh fruit, such as peaches.
